Moving Beyond the Rail and Taking it To-Go: Award-Winning Cocktail Recipe from RC Show 2020

As restaurants and bars across Canada continue to leverage alcohol delivery and takeout in order to comply with changing COVID regulations, ensuring creative and exciting offerings is a way to extend your reach and find new customers. We asked RC Show Beyond the Rail 2020 Winner Monique Godinho for her award-winning recipes that took home first place at last year’s Show. To rework these recipes in a to-go friendly format, Monique says, “I would simply prepare the syrups and bottle them separately from the spirits in a ratio that makes sense for the volume of spirit in the T/O Cocktail Kit.”

I’m A Lady Cocktail Recipe

Ingredients 

750ml Laphroig Select

370ml Madeira Syrup 

Apothecary Aromatic Bitters 

Garnish 

Grapefruit for Zest 

Dried/Toasted Coconut Chips

Syrup Prep

Madeira syrup

375ml Madeira

125 ml white sugar

30 ml lemon juice

1 cinnamon stick

2 cloves

1/4 teaspoon vanilla extract

1/8 teaspoon of nutmeg

  1. Combine all ingredients in saucepan
  2. Bring to a boil then immediately reduce to simmer for 20 minutes
  3. Remove from heat and immediately strain out spices

Instructions: 

Combine ingredients in mixing glass. Stir over Kold Draft Ice for 10-15 seconds until well diluted. Strain over 2”x2” king cube (if available). Express grapefruit oils and top with coconut chips.

Monique, or ‘Mo’ for short has worked in or around hospitality for 15 years. She is currently a bartender at Bar Ravel on College St. in Toronto, known for its cocktail program and ingenuity as a leader in the hospitality industry. Prior to this, Mo was the bar manager at Bar Poet on Toronto’s Queen St. 

Mo is passionate about ensuring sustainable practices in her work. “I try to be mindful of everything I do and what I’m using to be as sustainable as possible. I also like to work with unexpected ingredients and try to incorporate a variety of fruits, vegetables, milks, spices; manipulating/transforming them and giving them a new life. 

She is continuously learning to hone her craft as a bartender and hospitality professional. “The most beautiful part about working in hospitality for me is the diversity you find and the ability to do the job wherever you go (language permitting). You meet so many people from so many different walks of life and build an ultimate comradery. I am also a firm believer that people who work industry are generally the best humans around.”

Beyond the Rail Competition will back for RC Show 2021 ONLINE LIVE with a twist! This year, attendees can watch the Cocktail Kit Pitch Competition as finalists compete for $3,500 in prizes and have the opportunity to demonstrate and share their unique creations.
